Grilled Corn and Berry Salad With Fresh Herb Dressing

Ingredients:

For the Salad

  • 2 cornhusks, grilled and with kernels removed
  • Handful arugula
  • 1/4 cup California Giant Berries Blueberries
  • Sprinkling of goat cheese
  • Pinch of sea salt

For the Berry-herb dressing

  • 1/4 cup California Giant Berries Blackberries
  • 1 cup fresh mint and basil
  • 3 tbsp olive oil
  • 1 tsp lemon juice
  • 1 tbsp honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Splash of water

Directions

  1. Start by making the dressing. Add all the ingredients into a food processor or blender and mix until the herbs and berries have been chopped and combined. Pour in a cup and set aside.
  2. Add all the salad ingredients into a large bowl and top with the dressing. Mix well. Serve and enjoy!
