Mediterranean Orange Salad with Pistachios

Ingredients:

  • 2 Sunkist® Blood oranges
  • 3 Sunkist® Cara Cara oranges
  • 1 teaspoon Mediterranean seasoning mix
  • 3 tablespoons extra virgin olive oil
  • 1 Sunkist® lime, juiced
  • 1 tablespoon honey
  • 2 tablespoons sliced pistachios
  • 1/2 cup thinly sliced red onion
  • 2 tablespoons chopped mint leaves for garnishing

Directions

  1. In a small bowl, add olive oil, lime juice, honey and Mediterranean seasoning mix. Whisk it using a spoon until it's mixed well and set aside.
  2. Slice a little piece off the top and bottom of each orange, so you have a stable cutting surface. Trim away all the skin and pith with a small sharp knife without taking too much off the fruit. Slice oranges horizontally and arrange on a serving platter.
  3. Now spread the sliced pistachios and onion on top of the arranged orange slices.
  4. Stir the salad dressing with spoon and drizzle over the arranged salad.
  5. Sprinkle the seasoning mix as per your taste, then garnish it with chopped mint leaves.
  6. Let it sit for 5 mins and then serve.
