Ingredients:
Salad
- 4 cups mixed salad greens such as leaf lettuce, endive, and radicchio
- 1 large Granny Smith, cut into small cubes
- ½ cup chopped walnuts
- ½ cup crumbled feta cheese
- ½ cup dried cranberries
- 2 tablespoons finely chopped green onions (Optional)
Dressing
- ¼ cup vegetable oil
- ¼ cup blueberries
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- ¼ teaspoon salt

Directions
- Layer salad greens, Granny smith apple, walnuts, feta cheese, cranberries, and green onions in a large bowl.
- Combine vegetable oil, blueberries, extra-virgin olive oil, balsamic vinegar, and salt in a food processor or blender; pulse into a smooth dressing.
- Pour dressing over salad; toss to combine.
- Chill until serving.
